Chickpea Salad Sandwich
(easy and healthy!)
Consider yourself to be in a rush, hungry, and in possession of some Enther 1-Compartment Containers that are chickpea-filled. Now you may have a meal with a quick and nutritious chickpea salad sandwich! A vegetarian version of it is also possible!
Ingredients:
6 tablespoons extra-virgin olive oil
2 cans chickpeas, rinsed and drained
2 Slices crusty white bread, toasted
1 red onion, chopped
½ garlic clove
½ Shredded carrots
Crisp veggies
Fresh dill
Mayonnaise and salt, as needed
Preparation:
Step 1: In a large bowl, make a chickpea mash. Use the back of a sturdy fork blender to crush the chickpeas roughly. They will hold together more effectively the more thoroughly you mash them.
Step 2: Combine dill, garlic, onion, and olive oil. Add salt and pepper, then mix in the chickpeas until thoroughly incorporated.
Step 3: Each slice of bread should have mayonnaise spread on one side. One side of the bread should be covered with the lettuce and chickpea salad. Enjoy as you press together!
Tip:
You can increase the amount of mayonnaise to make up for any dryness in the texture of your chickpeas.
